Gold Rum Cocktails to Savour This Season
There's something about gold rum that demands to be sipped slowly — or mixed with intention. At Mounts Bay Distillery, our Rum Dhu Cornish Gold Rum is distilled in small batches using traditional wood-fired methods on the Cornish coast of Cornwall, giving it a depth of character that shines in cocktails as much as it does neat.
Here are our favourite gold rum cocktail recipes to try at home — each one crafted to let the rich, caramel warmth of Rum Dhu do the talking.
The Cornish Gold Daiquiri

A classic daiquiri elevated by the rich, caramel notes of our small batch Cornish gold rum.
You'll need:
- 50ml Rum Dhu Cornish Gold Rum
- 25ml fresh lime juice
- 15ml sugar syrup

Method: Shake all ingredients hard with ice, double strain into a chilled coupe. Garnish with a lime twist.
Wood-Fired Old Fashioned

Let the rum do the talking. The smoky, vanilla warmth of Rum Dhu — distilled in a wood-fired still in Cornwall — makes this a natural fit for an Old Fashioned. One of the most satisfying craft rum cocktails you can make at home.
You'll need:
- 60ml Rum Dhu Cornish Gold Rum
- 5ml demerara syrup
- 2 dashes Angostura bitters

Method: Stir over ice until well chilled. Strain into a rocks glass over a large ice cube. Express an orange peel and drop it in.
Cornish Rum Punch

Perfect for sharing — this punch leans into the tropical fruit notes that our Cornish climate somehow coaxes out of the still. A crowd-pleasing gold rum cocktail that works beautifully at any gathering.
You'll need:
- 50ml Rum Dhu Cornish Gold Rum
- 75ml pineapple juice
- 25ml fresh orange juice
- 15ml grenadine
- Dash of Angostura bitters

Method: Build over ice in a highball. Stir gently. Garnish with a dehydrated orange wheel, fresh mint sprig, and a thin slice of fresh chilli.
Why Gold Rum?
Gold rum sits between the lightness of white rum and the intensity of dark rum — aged just long enough to pick up colour and complexity, but still versatile enough for a wide range of cocktails. Rum Dhu is distilled in small batches on the Penwith Peninsula in Cornwall, where the Atlantic air and wood-fired still leave their mark on every bottle. It's craft rum made with genuine intention — and it shows in the glass.
