August 2024 update, Wood fired stills!
We've had a busy few months and we're thrilled to share a little sneak peak of our newest additions to the distillery family.
Firstly, we thought it time to introduce Simon. He's a top distiller, bottler, fire lighter, rum taster and all-around amazing fella! In between golfing, badmington, cricket and God knows how many holidays, he can be found in the distillery lending us a helping hand.
Secondly after working on this for quite some time, we're delighted to announce plans to run our stills on wood fire. Not only will this lead to better flavoured rum thanks to all the caramelization of the sugars in the rum beer when distilling, it also means we're able to source our fuel locally rather than relying on rising electricity and gas prices.
A big reason for us going down this path is due to our carbon footprint, burning wood is a great option for us to do our part.
