Black Spiced Rum from Cornwall
Rum Dhu is fermented on the cliffs of Cornwall, up above the sea spray.
Distilled on copper pot stills before being spiced and aged in oak casks.
Inspiration for our Spiced Rum is taken from the ocean, its hidden gullies and kelp forests, deep below the rolling boom of Cornish swells, the howling wind and thunder during squalls.
Knuckles pressed white against gunwales on ships out on the blue. Pounding surf against cliffs. Warm nights by the fire with glass in hand whilst storms batter down.

Black Spiced Rum from Cornwall
Black spiced rum is a type of rum that is infused with spices and other flavourings, giving it a distinct taste and aroma. The spices used in black spiced rum can vary, but common ingredients include vanilla, cinnamon, nutmeg, and cloves. It is typically aged for a longer period than white or light rum, which contributes to its deep hue and enhanced complexity. Black spiced rum is often made from molasses, a byproduct of sugar production, and is aged in charred oak barrels.
The aging process of black spiced rum allows it to develop flavours of caramel, vanilla, toffee, and sometimes even hints of chocolate and spice. It's common for black rums to have a slightly sweet taste, although the specific flavour profile can vary depending on the brand and production methods.
The process of making black spiced rum usually involves blending aged rum with spices and other natural flavors. The resulting mixture is then aged further to allow the flavors to meld and deepen. Black spiced rum can be enjoyed neat, on the rocks, or mixed into cocktails. It is often used in tropical drinks and tiki cocktails, where its bold flavour can stand up to other ingredients.
The dark and intense character of black spiced rum makes it a popular choice for cocktails that require a strong and distinctive rum flavor. It can be used in classic rum cocktails such as the Mai Tai, Dark and Stormy, or Rum Punch. Additionally, black spiced rum can be enjoyed on its own over ice or used as a base spirit in various mixed drinks.
