Rhubarb Gin Gimlet with Ebba Coastal Gin

The gimlet is one of those cocktails that rewards a good gin. Simple enough to let the spirit speak, sharp enough to keep things interesting. Add seasonal rhubarb and you've got something that feels genuinely special — and takes about two minutes to make.

We make ours with Ebba Coastal Gin. Its crisp citrus notes from sea berries and the subtle salinity of rock samphire play beautifully against the tartness of rhubarb and the brightness of fresh lime. It's a pairing that makes sense the moment it hits your glass.

The Rhubarb Gimlet

Serves 1

Ingredients

  • 50ml Ebba Coastal Cornish Dry Gin
  • 25ml fresh lime juice
  • 20ml rhubarb syrup (see below)
  • Ice
  • To garnish: a thin slice of fresh rhubarb or a twist of lime

Method

  1. Add the gin, lime juice, and rhubarb syrup to a cocktail shaker filled with ice.
  2. Shake hard for 10–15 seconds until well chilled.
  3. Double strain into a chilled coupe or martini glass.
  4. Garnish with a thin curl of fresh rhubarb or a lime twist.

Rhubarb Syrup

Making your own takes 15 minutes and is worth every second.

  • 200g fresh rhubarb, roughly chopped
  • 150g caster sugar
  • 150ml water
  • Optional: a small piece of fresh ginger for warmth

Combine everything in a small saucepan over a medium heat. Stir until the sugar dissolves, then simmer gently for 10 minutes until the rhubarb has broken down and the syrup is a deep blush pink. Strain through a fine sieve, cool, and store in the fridge for up to two weeks.
