The Midsommar Gin — Lisa's Swedish Serve
Every Midsommar, the table is set with pickled herring, new potatoes, and ice-cold schnapps. It's a tradition we carry with us — and one we've made our own here in Cornwall.
If we're making cocktails on the longest day, this is what we reach for. Ebba Coastal Gin, with its clean Atlantic botanicals, is the perfect base. Add caraway for that unmistakably Nordic warmth, fresh cucumber for the long-day freshness, dill to bring it all together, and a quarter lemon peel to lift the whole thing. Herbaceous, aromatic, and completely at home on the longest evening of the year.

The Midsommar Gin
Ingredients
- 50ml Ebba Coastal Cornish Dry Gin
- A pinch of caraway seeds, lightly crushed
- 2 slices of fresh cucumber
- A sprig of fresh dill
- Quarter lemon peel
- Ice
- Good quality tonic to serve
Method
Muddle the caraway seeds, cucumber and lemon peel gently in the base of a glass. Fill with ice. Pour over the Ebba Coastal Gin. Serve long with a good quality tonic, or strain into a chilled coupe and serve straight up — both work beautifully. Garnish with a sprig of dill and a cucumber ribbon.
