Every bottle of Rum Dhu Black Spiced starts with a question we take seriously: what actually makes a spiced rum worth drinking? Not a list of flavourings. Not a shortcut. Real ingredients, properly handled, fire distilled in small batches right here in Cornwall.
Before anything goes into the still, every spice is toasted and blackened to draw out the deepest possible flavour. It's the kind of step that takes time and can't be rushed — and it's what makes Rum Dhu taste like nothing else.
Here's what goes in.

Lime & Kaffir Lime Leaves
Fresh lime peel brings brightness and citrus edge. Kaffir lime leaves add a floral, aromatic layer that makes the citrus feel alive rather than flat.
Vanilla
Whole vanilla pods — not extract, not flavouring. They give Rum Dhu its warmth and depth, the long finish that lingers after the glass is empty.
Ginger
A gentle heat that builds slowly. Ginger adds spice without aggression and gives the rum its backbone.
Cardamom
Fragrant, slightly smoky, unmistakably exotic. The ingredient people can't quite place but always notice.
Cassia Bark
Deeper and more complex than cinnamon, cassia brings a warm, woody sweetness that runs through every sip.
Allspice Berries
The classic Caribbean spice — clove, nutmeg, cinnamon all at once. Allspice ties the whole blend together and gives Rum Dhu its unmistakable warmth.
Dulse Seaweed
This is the one that surprises people. Dulse is a Cornish coastal seaweed with a subtle umami depth. You won't taste 'seaweed'. You'll taste something you can't quite explain but don't want to stop drinking.
Homemade Golden Syrup
We make our own. It gives Rum Dhu a natural, rounded sweetness — nothing sharp, nothing artificial. Just the right amount to balance the spice.
